This one-pan sausage, peppers and potatoes traybake is the kind of dinner that practically cooks itself. Everything goes onto one tray, roasts until golden, and comes out ready to share straight from the pan.
Serves: 4
Prep time: 5 minutes
Cook time: 25 minutes
Total time: 30 minutes
Oven: 200°C, 180°C fan, gas mark 6
Ingredients
- 600g baby potatoes, halved
- 8 pork sausages (about 400g)
- 2 bell peppers, deseeded and cut into chunks
- 1 red onion, cut into wedges
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 2 garlic cloves, thinly sliced
- Salt and black pepper, to taste
- A small handful of fresh parsley, chopped, to serve
Method
- Heat the oven to 200°C, 180°C fan, gas mark 6.
- Put the potatoes, peppers and onion in a large roasting tin. Drizzle over the olive oil, add the paprika, oregano and garlic, season well, and toss until everything is coated.
- Nestle the sausages among the vegetables, then spread everything out in a single layer.
- Roast for 25 minutes, turning the sausages and vegetables halfway through, until the sausages are browned and cooked through and the potatoes are golden and tender.
- Scatter over the parsley and serve straight from the pan.
Tip: Use small baby potatoes and cut them in half so they cook quickly, and do not pile the vegetables up, or they will steam instead of roasting.
